I can honestly say, guys, that this is one of my absolute FAVORITE cookie recipes of all times. I mean, it’s a tough toss up between the The BEST Chocolate Chip Healthy Cookie Recipe that I made the other day, but this is a different category, right? We’re talking about the world of non-chocolate chip cookies here. In that world, this Gluten-Free Almond Cookies recipe is my hands down favorite!

Ah ok, I honestly can’t decide between the two recipes. Let’s just make them both, shall we? After all, it IS December which is basically give-me-all-the-cookies month anyway. And these almond cookies are healthy, so that means we can eat more of them! 😉

For the dark chocolate drizzle (which is optional but totally necessary), melt dark chocolate and drizzle it over each cookie once they are baked. Take theseGluten-Free Almond Cookies to the next level by topping each cookie with a sprinkle of sea salt! SO yum.

TheseGluten-Free Almond Cookies can be easily made dairy-free and vegan!

To make this recipe dairy-free, simply replace the dark chocolate chips with dairy-free chocolate chips (these are so delicious) for the chocolate drizzle.

To make vegan, replace the egg with a flaxseed egg (they’re so easy to make or you can buy a vegan egg mix HERE) in addition to using dairy-free chocolate chips!

These were SUPER, thank u so much, Christine! Brought them to dinner at a gluten and dairy-free friend’s house. They were highly complimented, and every one was eaten.

And I even skipped the chocolate bc he is also diabetic. (The light amount of sugar in the body of the cookie was ok for him.) Someone here suggested that the coconut oil taste overwhelmed the almond, so I used only 2 tbs coconut and 1 tbs grape seed oil, which worked well. Next time I would double the almond extract to a full tsp bc I love an almond cookie and this was not quite as almondy as I’d like. (Then again, I did lose some flavor by skipping the chocolate.)

But those are my own preferences for flavor. Otherwise this recipe was excellent in producing a nice, lightly sweet, chewy cookie.

These were amazing!! I didn’t have coconut oil or almond extract so used olive oil instead and just left out the almond extract. The almond flour packed plenty of almond flavor still! I was able to get 15 cookies out of this and they are perfect bite sized portions. Super delicious.

Hi thanks.for this absolutely delicious recipie which is healthy at the same time. But mine were very soft and chewy. How can we make them crispy n crunchy? Also the coconut taste over powers the almond taste when I dnt put the almond extract.
